Perhaps there will be days when you know you will be out but want to leave a nourishing meal for the family. You might also want to give your kids nutritional school lunches but know you won’t have much time to get them ready. This is where cooking food in large batches allows you to plan good meals even when you don’t have time to cook. Not every recipe lends itself to batch-style cooking, so here are some of our favourite batch-friendly dishes: pantry chickpea curry; creamy Mexican chicken; mushroom, pea and lentil pie mix; slow-cooked apple-cider vinegar and smoked paprika pork; pulled pork and apple sandwiches; farmhouse lasagne; and spinach, mushroom, chickpea and oat loaf.
